Recipes | Veal thymus, caramelized apple and parsley cream
| Ingredients for 4 servings: |

| 800 g veal thymus |
| 4 apples |
| 200 g onions |
| 500 g parsley |
| 200 ml heavy cream (30%) |
| 100 ml canola oil |
| 50 g sugar |
| salt, pepper to taste |
Preparation:
Pour boiling water on the thymus, clean and sprinkle with flour, then fry in a pan on each side until golden for approx. 2 minutes.
Cut the apple into circles, fry in a pan and caramelize with butter and sugar.
Cook parsley in cream, season with salt, pepper and mix together. Spread the cream on a plate using a spoon, make a pyramid out of the layers of thymus and apple and decorate with herbs.
